I feel most people agree that the one thing that is too much hassle to actually selfhost if you’re not really into it is hosting your on own mail, so if you’re up for it there are a lot if privacy respecting services out there that give you email (and calender, contacts, filesymc etc) for not too much money with your own domain. I’d probably have a look at Tuta or Mailbox.org first.
+1 for Jellyfin
Could it be your network? The video does get transcoded on the server, then it’s streamed to your computer so it needs less bandwidth than an unencoded stream?

I’ve used Openmediavault in the past and had a short look at Proxmox but I’ve been running two servers on bare metal Ubuntu for years without any problems. I feel like I don’t really see the added value, I can run docker, SMB shares fine on without Proxmox and OMV. What do you want to do that Mint wasn’t able to do?
My guess would be Linux ISOs ^ _ ^

Netdata also might be an option, depending on your setup/system container names might be an endless string of characters (🫠) or the container names (😘), I could never figure out why …
